Apple Waffles

These gluten-free apple waffles are the perfect start to your day – warm, nourishing, and easy to digest. Instead of flour, they use rolled oats and grated apples, making them high in fiber and naturally moist. Spices like cinnamon, cardamom, and a hint of vanilla create a comforting aroma. Their soft texture and warming nature make them ideal for Vata types, though they can be customized to balance all three doshas.

Preparation: 10 min / Cook: 10–15 min / Rest: 5 min soak for oats

Perfect – serve warm with ghee, add cinnamon and cardamom for balance.

Reduce cinnamon and vanilla, use coconut oil instead of ghee, and add more apple.

Pre-cook the apple, add ginger or cardamom, and bake waffles until crisp.

Ingredients

  • 1 large apple, coarsely grated

  • 2 eggs

  • 70 g rolled oats

  • 1 tbsp maple syrup or honey (according to dosha)

  • 1 tsp cinnamon

  • ½ tsp ground cardamom

  • ½ tsp vanilla powder or extract

  • pinch of salt

  • ghee or coconut oil for greasing

Preparation

  1. Grate the apple and mix with all ingredients in a bowl.

  2. Let the batter rest for 5 minutes.

  3. Preheat the waffle iron to medium and grease it.

  4. Pour batter in portions and bake until golden brown (about 3–5 min per waffle).

  5. Serve warm and garnish as desired.

Serve warm from the waffle iron with apple compote, yogurt, or a drizzle of warm ghee. Optional: sprinkle with chopped nuts.
